It depends on the game. It's best to consult a readme file, of NFO file, as those files most of the times contain information about what have been cut from the game, if anything. There are releases that are incomplete, but there are releases that are 100% full, and nothing was removed from the game. So it simply depends on the particular release of the cracked game.
Game rips (games with removed content) were popular years ago, where internet bandwidth was important. Some people couldn't afford to download games with all cutscenes because the game was too big to download, so they prefered game rips, games without cutscenes, music, etc. But nowadays I'm not sure if those forms of releases are popular anymore.
